Blue Chia Seed Layered Pudding

Ingredients

  • 4 tablespoons chia seeds
  • 2 tablespoons of Cocobella coconut yoghurt
  • 250ml coconut water from Cocobella
  • 2 tablespoons of Maple syrup
  • 3 drops of peppermint oil

Toppings:

  • Puffed Millet
  • Kiwis
  • Blueberries

Method

  1. Split the chia pudding into 3 separate bowls and add 1/4 teaspoon, 1/3 teaspoon and 1/2 teaspoon of blue spirulina and mix to create different shades of blue
  2. Layer it with coconut yoghurt, puffed millet, kiwis and blueberries
