@healthiielife– Tropical Breakfast Bowl
Cassidy of @healthiielife is a young vegan with impressive fitness tips and recipes. Her breakfast bowls are always amazing but this one has a tropical twist.
Serves: 1
Cooking time: 10 mins
Ingredients:
1 Frozen banana
1/4 Cup frozen mango
1/4 Cup frozen pineapple
1/4 Cup Cocobella coconut water
1 Scoop salted caramel protein
Method:
1.Combine all the ingredients in a blender and blend til smooth.
2.Pour smoothie into your favourite bowl
3. Garnish your bowl with fruits, seeds and nuts, cocoa nibs and shredded coconut.
@hungryheallth – Choc Protein Brownies with Raspberry Chia Jam and Coconut filling
Lucy of @hungryheallth is passionate about creating recipes that are gluten free, dairy free, refined sugar free and totally delicious.
Serves: 12
Cooking time: 25-35 mins depending on oven
Brownie ingredients:
1 Macro Mike 300g packet ‘double choc protein brownies’
1 Cup of Cocobella coconut water
1/4 Cup slivered almonds
2 tbsp Coconut flakes (for topping)
Filling ingredients:
1/2 Cup Cocobella Natural Coconut Yoghurt
1tbsp Maple syrup
3 cups Frozen raspberries
1 1/2 tsp Vanilla extract
3 tsp Honey
5 tbsp Chia seeds
Directions:
2.Whilst brownies are baking, combine raspberries, vanilla, honey and chia seeds in a small saucepan over high heat, stirring continuously until a smooth jam-like consistency is formed and all raspberries are melted. Transfer to a small bowl.
2.When your brownies are out of the oven and cooled completely, carefully cut your brownie in half sideways (if this is too tricky, cut your brownies into small individual squares and then cut them in half width ways).
3.Layer your brownies, starting with a nice layer of the raspberry chia jam, then a smooth lather of the coconut yoghurt. Drizzle your brownies with maple syrup and they are ready to be enjoyed with friends and a nice cup of your favourite brew!
@themobilenutritionist – Creamy Pumpkin Soup
Kirstie Cunningham of @themobilenutritionist is a qualified Nutritionist and self proclaimed ‘plant lady’ who loves creating recipes that inspire healthy living. This creamy pumpkin soup is no exception.
Serves: 4
Time: 20 mins
Ingredients:
1 kg Chopped pumpkin
1L Vegetable stock
1 Diced brown onion
1 tbs Minced garlic
1 tbs Butter
1 tsp Ground nutmeg
1 tsp Ground sage
4 tbs Cocobella Natural Coconut Yoghurt
Method:
1. Add butter and garlic to a large pot and cook brown onion until soft
2. Add 1L of vegetable stock and chopped pumpkin
3. Add in the rest of the ingredients except coconut yoghurt and simmer until pumpkin is soft
4. Once mixture has cooled slightly, blend with a stick blender until smooth
5. Top with coconut yoghurt, crispy chickpeas and fresh herbs
@nomadicfitfoodie – Pink Pitaya & Coconut Chia pudding with Tropical Nice Cream
This healthy treat is a mouthful of exotic and nutrient dense fruits, seeds and coconut goodness.
Serves: 3
Time: 10 mins
Pudding ingredients:
1 Cup coconut milk
1/2 Cup pink pitaya
1 tbs Maple syrup
4 tbs Chia seeds
Method:
1.Blend coconut milk, maple syrup & dragonfruit in a blender til smooth.
2.Pour the liquid in a jar and add in the chia seeds.
3.Stir til the mixture thickens up and leave in the fridge overnight.
Tropical Nice Cream Ingredients:
1/4 Cup Cocobella coconut water
1/2 Cup frozen mango
1/2 Cup frozen pineapple
3 Passion fruits
1 tbs Honey
1 frozen Banana
Method:
1.Pop all the ingredients in a blender and blend till smooth.
2.Pour the nice cream in a bowls or cups and leave to set in the fridge.
3.Scoop the chia pudding onto the set Tropical Nice Cream portions, add sliced fruits to garnish and serve.
